Khorovats
Armenian grilled meat skewers with vegetables.
Ingredients
- 700 g pork or lamb
- Onion
- Paprika
- Tomatoes
- Peppers
- Lavash and herbs
How to make it
- Marinate meat with onion, salt and spices. Work in a bowl for 2-3 minutes until the mixture looks even, then let it rest for 10-20 minutes so the flour, meat or spices hydrate properly.
- Thread meat and vegetables onto skewers. Continue gently and check texture rather than only the clock; the dish is ready when the main ingredient is tender and well seasoned.
- Grill over high heat until charred and juicy. Use medium-high heat to get color, then lower to medium so the inside cooks through without burning. Turn only when the first side has a firm golden crust.
- Serve with lavash and fresh herbs. Taste once more before serving. Add salt, acid, herbs or a spoon of sauce at the end while the dish is still hot.
