Stroopwafel

Dutch caramel waffle cookies.

Ingredients

  • Waffle dough
  • Butter
  • Brown sugar
  • Syrup
  • Cinnamon
  • Pinch of salt

How to make it

  1. Cook thin waffles in a waffle iron. Prepare this first and keep the heat moderate; rushing the first stage usually gives uneven texture later.
  2. Split while warm if thick enough. Continue gently and check texture rather than only the clock; the dish is ready when the main ingredient is tender and well seasoned.
  3. Simmer syrup, sugar, butter and cinnamon. Start over medium-high heat until the water or broth is bubbling, then lower to medium or medium-low and cook gently for 10-25 minutes, depending on size, until tender but not falling apart.
  4. Sandwich caramel between waffle halves. Continue gently and check texture rather than only the clock; the dish is ready when the main ingredient is tender and well seasoned.
