Gräddtårta

Swedish Midsummer cream cake with strawberries, whipped cream and soft sponge.

Ingredients

  • Sponge cake layers
  • 500 ml whipping cream
  • Vanilla custard
  • Strawberry jam
  • Fresh strawberries
  • Blueberries or wild berries

How to make it

  1. Split the sponge into three even layers. Keep the knife level and brush away loose crumbs so the cream stays clean.
  2. Whip cold cream to soft peaks. Stop while it is still smooth and glossy; over-whipped cream turns grainy on the cake.
  3. Spread jam and vanilla custard between the layers. Add sliced strawberries in the middle so every slice gets fruit.
  4. Cover the cake with whipped cream, then chill for at least 1 hour. Finish with strawberries and berries just before serving.

Serving note

Serve cold after the main meal, when the cream is set and the berries still look fresh. For Midsummer, keep the decoration simple: strawberries, a few blueberries and green leaves are enough.
